SofaKing good.

So this is actually from last night, but i've been sick with some bug (probably cholera) and hadn't really slept in two days. I literally lied down on the bed to type this and all of a sudden it was 5:26am and i legit hadn't moved a muscle because my laptop was still on my stomach and my fingers on the keys. So anyway... last night's dessert became today's coffee hour (4pm), but my mom did help me make these swell candies to accompany it.

This is Rolled Blackberry Cake from the Williams-Sonoma Baking Book because i love berries, but especially blackberries. I almost love blackberries more then i love watermelon, almost.

First you make yellow cake. Sift half a cup of cake flour (And i'll tell you right now, there was entirely too much sifting in this whole recipe):


Seperate 3 eggs. Mix yolks with 2 tbs melted, slightly cooled butter and 1tsp vn extract. Beat the shit out of some egg whites and slowly add half a cup of sugar. Fold everything together and BAM! cake batter. Or just buy a fucking box, you know whatever. Spread out on jelly roll pan (high edged cookie sheet) bake at 350 for 9min, let cool.

Make whipped cream: 1 cup heavy cream, 2 tbsp powdered sugar, 1 tsp vn extract. Spread on cake, add blackberries roll:


Refrigerate 1/2 an hour or, you know, overnight. Sift powdered sugar:



Ok, so now the cool part, blackberry candies! My mom is a candy genious. For Valentines day she made this butter toffee, and i'm telling five pounds of it were gone overnight, 4 in my dad's belly. But today she made these by first melting some chocolate and painting the inside of these candy molds, and putting a sugar coated blackberry in it:


Then covering with more melted chocolate:

and refrigerating for like an hour. And ta-da!


I'm not sure why she felt the need to advertise the blackberries in each pic, but you know, whatever. What a champ. So we served them together, cause we're classy like that. I wanted to garnish with mint, but we didn't have any so i used some parsley which oBviously goes perfectly with cake, duh. Anyway you can't tell because the pic is super blurry. I didn't retake because who knows.
